Tomato Soup: 4 cups of Organic Plum Tomato’s. 1 cup of Vegetable Stock.1 Onion, 5 Garlic Cloves, 2 Medium peeled Sweet Potato’s. 2 TBS of Cashews. Salt n Pepper. Boil the Tomato’s, Potato’s, and Onion until Soft. Than add all of the ingredients to your Vita Mix/ Food processor. This is perfect for a light lunch or an afternoon snack. Enjoy:

You will need : Spinach Leaves, Chopped, Strawberries, Sugared Almonds ( Melt 1 TBS of butter in a skillet, add 1 cup of Almonds, 1 TBS of Brown Sugar stir until toasted light brown), Dressing ( Shake in a mixer or jar ¼ cup of Olive Oil, 2 tablespoons red wine vinegar, 1/2 teaspoon salt, Dash of Tabasco)# Grilled Chicken Strips on top is optional. Combine lettuce, strawberries, in a large bowl. Toss with dressing and sprinkle with almonds. Serve immediately. Enjoy
