Shakshuka

08APPE-superJumboSpicy Shakshuka is an eye-opening breakfast with eggs cooked in a fiery tomato sauce.

Ingredients:

1 tablespoon olive oil

2 cloves garlic, minced

1 onion, cut into 2 inch pieces

1 red pepper, cut into 2 inch pieces

1 can whole peeled plum tomatoes with juice

1 teaspoon paprika, or to taste

4 eggs

Directions:

Heat the vegetable oil in a deep skillet over medium heat. Stir in the garlic, onion, and bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the canned tomatoes, paprika stir, using the back of a spoon to break up the tomatoes. Simmer for about 15 minutes.

Crack an egg into a small bowl, then gently slip the egg into the tomato sauce. Repeat with the remaining eggs. Cook the eggs until the whites are firm and the yolks have thickened but are not hard, 2 1/2 to 3 minutes.

The tomato base can be made ahead of time and the next morning you can reheat the mixture and add the eggs.

Turkey-Licious Chili

This is a very simple and hearty chilli with plenty of flavour. I serve this with Cheddar cheese and Sour Cream.

You will need:

1 lb Minced Turkey Olive Oil, 1 Can of Tomatoes, 1 Red Pepper, 1 Yellow Pepper, 1 Onion, 1 Can of kidney beans,  2tsp Chopped Garlic, 2 Tbs Chilli Powder, Salt n Pepper, 2 cups of Vegetable Stock, 1/2 Tsp Cumin.

Directions:

Heat the oil in a large pot over medium heat. Place turkey in the pot, and cook until evenly brown. Stir in onion, and cook until tender.

Pour water into the pot. Mix in tomatoes, kidney beans, and garlic. Season chilli powder, cayenne pepper, cumin, salt, and pepper. Bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.

Also I love blitzing all my spices, and veggies in the Vitamix , than simmering for 30 minutes with the turkey.

Cashew Cuisine

This is delicous and definitely an easy way to impress your loved ones.

Serves 2

 

You will need:

 

Broccoli, Cashews, Ready Made 7 Grain or Brown Rice, 1 egg, Mushrooms, Hot Chili Sauce, Chopped Garlic, Mirin, Light Soya Sauce, boullian vegetable stock.

 

Chop the mushrooms and Broccoli.

 

In a pan Heat 1 Tbs of Olive Oil, 2 Tsp Chopped Garlic and cook the mushrooms until slightly golden brown.

 

Add Swiss Vegetable Bouillon too boling water than the broccoli until slightly soft.

 

Check the directions on the rice package, than add the egg and stir.

 

In a bowl add 3-4 squeezes of Hot Sauce, 1 tsp of chopped garlic, 1-2 Capsules of Mirin, 3 Tbs of soya.

 

Now add all of the ingredients to the mushrooms and stir,  I like mine slightly tangy sweet so adjust according to your taste buds.

Sumptous SAUSAGE VEGETABLE SOUP

 

Turkey-Sausage-Gnocchi-SoupServes 4:

You will need:

6 Ripe Tomatoes, 2-3 Garlic Cloves, 2 Cups of Drained/Mixed Beans, 1/2 Cup of Kidney Beans, 8 Chipolte Sausages, 2 Vegetable bouillon Stock Cubes, Sea Salt & Pepper.

Serve with Parmesan, and Spoonful of Creme Fraiche or Greek Yogurt.

1) Preheat Oven, add Tomatos in the roasting pan, pour some Olive oil, Garlic and Salt. Grill for 5-10 minutes until soft.

2) Put Tomatoes in Blender/Vitamix/Food Processor until smoothe.  Add all the beans, and process for another 30 seconds, until beans are broken down, but still has a chunky texture.

3) Transfer the mix to a pan.  Dissolve the bouillon cube in 3/4 ups of boiling water , and add to the soup, on a medium heat stir occasionally.

4) Ladle the soup into soup bowls, and add spoonful of Creme fraiche, and sprinkle with parmesan.

Having heard many great things about this book, I picked it up last month and really liked it!   Focused on balancing the body’s pH content, Honestly Healthy is both a cookbook and a lifestyle guide that promotes healthy living. Its all about alkalizing and the dishes are all vegetarian from savoury soups, to tasty treats all delicious and nutritious.  I recommend this for anyone who is looking for some healthy but flavoured food.  It uses lots of vegetables, grains, seeds and nuts in the recipes. Perhaps a good stocking stuffer or for one of your health nut friends who wants to have a CLEAN start to the new year : -)
